Tacos in Pasta Shells

This is a recipe that I got from Allrecipes.  I tried it once earlier this month and it got raves!  It will be a definite regular in our menu plan.  I have altered it a smidge to (I think) make it easier.

Tacos in Pasta Shells

1 lb ground beef

1 pkg taco seasonings

3oz cream cheese

18 jumbo pasta shells

1 cup taco sauce

2 cups shredded Cheddar cheese

1 ½ cups crushed tortilla chips

Directions:

  1. In a large skillet, brown beef over medium heat until no longer pink, drain.  Add taco seasonings and simmer according to directions.  Add cream cheese and mix in, about 5 minutes.
  2. Meanwhile, bring a large pot of water to a boil.  Add pasta and cook for 8 to 10 minutes or until al dente; drain. 
  3. Preheat oven to 350 degrees.
  4. Fill shells with beef mixture and arrange in a 9×13 inch baking dish then pour taco sauce over shells.  (I don’t measure the sauce, I just pour it on.)   Cover with foil and bake in preheated oven for 15 minutes. 
  5. Remove dish from oven and top with Cheddar cheese and tortilla chips.  Return dish to oven and cook for 15 minutes more.
  6. Top with your favorite toppings and enjoy!

Thanksgiving is over and we are on to the holiday rush!  Hopefully we won’t be sucked in too much.  D and I will be Christmas shopping on Friday so the boys will go to my MIL’s and have dinner there.  Also, we have a birthday party to go to on Saturday and have been invited to the family party/dinner afterwards as well.

  • Monday – Tacos in Pasta Shells and a salad
  • Tuesday – London Broil with roast carrots and potatoes
  • Wednesday – Creamy Tomato Pasta and salad
  • Thursday – Minestrone Soup with homemade bread
  • Friday – Christmas shopping (bring sandwiches?)
  • Saturday – Dinner at friend’s birthday party
  • Sunday – Breakfast for dinner

 I need to come up with two meals to freeze this week as well, so I can stay on target with my 101 goals.  I am going to try to use up food that is already in our house so I don’t have to go to the store again.  I will post about them later, IF I come up with them!

Lately I’ve been feeling like I have a lot of things I want to accomplish but no real direction or organization on how to get them done.  Then I found a couple of posts on list making and goal setting on my new favorite blog, The Simple Dollar.  The one that intrigued me the most was one on 101 goals in 1001 days.  Basically you come up with 101 goals that you want to accomplish in 1001 days (roughly 33 months).  The goals need to be specific and the results need to be measurable or clearly defined.  It is also suggested that the goals be realistic (I would love to save $50,000 in 1001 days, but that’s just not gonna happen!) but at the same time stretching.

So I decided to make my own list.  It is rather overwhelming to look at such a monsterous list!  I have tried this sort of thing before, and not succeeded.  After reading the book,  The Seven Habits of Highly Effective People, I have a renewed enthusiasm.  (More on the book in another post.)  This is something that I can do!

My start date is November 29, 2009.  The end date is August 26, 2012.  It seems so far away, but after putting it in the context of the 101 goals, it doesn’t seem that long at all.  Here’s my list:

  1. Complete the list of 101 goals (101/101)  Done
  2. Come up with an action plan for each goal (0/101)
  3. Buy greeting cards for next month by last day of current month (1/33)
  4. Get important papers put in trust name
  5. Only get books from the library (do not buy any!)
  6. Organize Household management book in a more user friendly way (this needs to be better defined)
  7. Return all library books on time
  8. Get Big I on a commission system
  9. Get Little E on a commision system
  10. Get the boys portraits taken
  11. Update Little E’s baby book
  12. Update Big I’s baby book
  13. Have 10 bookkeeping clients by 12/31/2010 (0/2)
  14. Have 12 bookkeeping clients by 12/31/2011  (0/2)
  15. Set up a regular schedule for backing up files
  16. File at least once per week  (0/142)
  17. Get all monthly work done by the 5th business day of the month (0/142)
  18. Get MOUS certified
